Spinach, figs, goat cheese salad with balsamic glaze vinagrette

One summer in Barcelona, my mother made this salad with fresh figs and delicious goat cheese and since them I haven't stop to make it every time I find fresh figs, but if you can't find fresh figs I buy dried ones and hydrated them for an hour on hot water and it works as well. You will need a bag of spinach, a tube of goat cheese (I particularly love the honey one at Trader Joe's) but the regular one or the crumbled one works as well. Cut the figs in fours add some olive oil and Balsamic glaze on top. The balsamic glaze you can also get it at Trader Joe's or any specialty supermarket, or you can make it at home reducing balsamic vinegar with brown sugar for 20 min and you will have Homemade balsamic glaze.
